Ingredients
- 4 boneless, skinless chicken breasts
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 lemon, cut into wedges
Instructions
- Prep the chicken — Pat the chicken breasts dry with paper towels. If they’re uneven in thickness, pound them lightly so they cook evenly.
- Season — Rub the chicken breasts all over with the olive oil, then sprinkle with salt, black pepper, and garlic powder.
- Preheat the grill — Preheat your grill to medium-high heat (about 400–450°F). Make sure the grates are clean and lightly oiled. (About 10 minutes)
- Grill the first side — Place the chicken breasts on the grill and cook without moving them. (About 6 minutes)
- Flip and finish — Flip the chicken breasts and continue grilling until the internal temperature reaches 165°F (74°C) and juices run clear. (About 6 minutes)
- Rest — Remove the chicken from the grill and let it rest for 5 minutes before slicing. This keeps the juices in.
- Serve — Serve with lemon wedges on the side for squeezing over the top.
Tip: For extra flavor, marinate the chicken in the olive oil and seasonings for 30 minutes to 2 hours before grilling. Always check doneness with a meat thermometer rather than relying on cook time alone, since grill heat can vary.
